At the end of the day it comes down to trust. Public faith in politics is pretty low as it is, especially among leave voters. If the political class is perceived to have stitched things up so that Brexit never happens, then many people will quite justifiably feel that when the chips are down, their voice counts for nothing. Maybe there was a conversation to be had about second referendums, but the time should for that should have been before the first one, so that everyone went into this with their eyes wide open. Cameron and co have a lot to answer for for not being so blindly confident of victory that they put no plans in place in the event that Leave won. Its now a question of making sure people feel that their vote was heard whilst at the same time keeping as much of our economy in tact as possible.

The fact that it is popular in and of itself is not the reason for doing it. There are plenty of policies that are popular with the public that politicians are largely opposed too. The difference with Brexit is that people voted for it in a referendum granted to them by parliament. They asked the electorate a specific question,so they can't simply respond by ignoring the answer. So going through with it is not about electoral opportunism, but upholding the principle that votes should have consequences, and avoiding the massive polarisation you see in America where two different sections of the population are locked in a culture war. Those are ends in and of themselves.
