DU is has denser but also has 2 key features first ,its naturally self sharpening Composite armor can easily blunt tungsten rounds whereas DU being naturally self sharpening means it resist composite armor much easier DU biggest feature is that its pyrophoric. In other words, it self ignites and burns at high temps. So even if it does penetrate, the heat from it burning will still compromise the target armor or worst, if it penetrate deep enough, the heat will force the crew to leave the tank EU does not use DU , and they have to develop a 130mm gun just to penetrate a T-14 armor whereas the US is confident in the M829A4 ability to penetrate a T-14s armor in one shot. Now the 130mm does have the advantage that its larger size makes its HEAT round far more dangerous than its KE round

And your point Most military weapons are toxic period simple due to the materials used

There is no danger with depleted uranium didnt already exist Russian tanks also have DU rounds Additionally, DU like Tungsten is a heavy metal and just as toxic armor-piercing fin-stabilized discarding sabot (APFSDS) tank round all use heavy metal which are toxic so its moot Secondly, it called combat effectiveness The whole reason why the EU developed a 130mm to combat the Russian T-14 is DU EU wont use it and the current 120mm tungsten rounds wont penetrate T-14s armor The US made 120mm M829A4 which is DU will penetrate T-14s armor Why the US uses DU First it has higher density than Tungsten which is key for AP rounds Second its naturally self sharpening so even when facing composite armor, it wont blunt out like tungsten Lastly and most importantly, its pyrophoric. DU ignites on contact and burns at extremely high temps so even if it doesnt penetrate, the burning is very damaging to a tank armor which is very nasty after effect to deal with The EU 130mm is simple a brute force with kinetic energy but the larger 130mm does have the advantage of much larger HEAT round

Russian tanks a combo if explosive and non explosive reactive armor (ERA/NERA) The problem with the NERA is that the plates are designed to literally break SABO rounds and ERA can counter HEAT rounds DU is much harder to stop with NERA and ERA has no effect on it Its a good bit that Ukraine is getting M829A3 rounds
