Borax was used by many producers during the Victorian era to mask the sour taste often caused by bacterial consumption, basically when bacteria eat, they create byproducts, these byproducts are acidic and very sour tasting/bad smelling as well (it's where smelly cheeses get their smell btw as they're intentionally allowed to be eaten by bacteria on purpose). Borax masks this, it was often used in milk/dairy before it was banned in most western countries because it was killing children. Because Borax doesn't kill bacteria it just masked it's byproducts, in turn it made it very difficult for consumers to tell if their milk had gone bad so families would feed their kids spoiled milk. Borax is also a common household chemical often used today when mixed with something sweet to kill ants. So I'm curious if they're using Borax to keep the food smelling fresh even when it goes bad, or is being consumed by bacteria.
