With the constant source of 100 mi/hr air, even at the same temp the gun would cool quite effectively, but, as you mentioned, with an average lapse rate of 2C (3.6f) per 1000', it gets a lot cooler fast as you go up. It is not uncommon flying out of Phoenix in my modern aircraft that I see an outside temperature spread of 45C to -57C (113 to -70).
