So what the hell is supposed to be the appropriate response to committing a crime not just in front of a cop, but against the cops, making it a felony?

Battery, put simply, is unwanted touching, directly or indirectly. Committed against a normal civilian, it can be charged as a misdemeanor or a felony. Against certain protected persons, like law enforcement officers, it is automatically enhanced to a felony. It's really not that hard to understand.

Battery alone can be charged as a misdemeanor or a felony. Battery against a protected person, in this case a LEO is automatically a felony, regardless of what form the battery takes. That's how it is in just about every state.
