In the case of the Saturn V, the first stage and the ICBM booster assembly of the Soyuz burns kerosine and LOX so the visible plume that you are seeing is largely water. The shuttle SSMEs also used liquid fuel cryogenic (liquid hydrogen and oxygen), so again the cloud is a result of condensed water vapour and steam. However, the solid rocket booster propellant consisted of atomized aluminum powder as the fuel, ammonium perchlorate which served as the oxidizer, iron oxide powder as a catalyst, polybutadiene acrylic acid acrylonite and an epoxy curing agent. Nonetheless, solid rocket launches are trivial in terms of atmospheric pollution in comparison to urban/industrial pollution and traffic.
