  1. Primarily because the vast majority of the population in the Western world gained far more wealth after the second world war. This, alongside with the shrinking of the world through technological advances like the larger availibiltiy of phones, cars, tvs and commercial flights, meant that certain dishes could become affordable and were popularised on an international level.
