  1. Whenever I try frying with butter and/or olive oil I struggle to find the right temperature. I'm not a turn-it-on-full-blast type of guy. I can happily simmer stuff on low, but it seems like no matter how low I go I end up with a smoking disaster. So I was surprised you accidentally had the heat up high without a scorching, smoking mess. I solved my problem by using clarified butter.
