Their armour scheme, both side and belt, and underwater protection / anti flooding, were so bad that even a single hit from a WW2-era torpedo would have doomed them.
Sure the armour could be upgraded, but will replacing engines save you enough, off a starting displacement of 14,500t, to work in that much more armour?
Making big improvements to underwater protection and anti-flooding would require gutting the entire ship.
Finally, speed is not determined solely by engine power. Hull form has a lot to do with it. Sure, you might have been able to put enough shp into it to increase flank speed, but at what cost to vibration (turbines vibrate), hull flexion, bow-spray and bow-wash impact, etc.
