I think you'll find the phone will probably still work in some form. You may not be able to make PSTN phone calls or send SMS messages without a SIM card or eSIM on the phone, but you should still be able to use the internet & apps on the phone, using a wifi internet connection etc. And as long as you can use the apps with a wifi internet connection, you can use messaging & video messaging apps to stay in touch with people. Also, if you want to send someone photos, for example, they can still be sent as an email attachment using the wifi internet connection on the phone.

They did say it was an "official" phone - so maybe it is one they need to have for their work, & provided to them by their employer - in which case it probably won't be easy to get rid of either the phone handset, or the SIM card it contains - which may be the property of the employer.

Won't your phone connect to a public wifi internet connection? If so, there's no SIM card required in the phone for that. The mobile phone/cell data that is available for use from your SIM card, is not a wifi connection - it is mobile phone/cell data & is not a wifi connection. And that cell data from the SIM card will obviously only work if that SIM card is inserted in the phone. But a wifi connection does not require a SIM card to be in the phone.

@robyee3325 Have you tried using different wifi connections & made sure your phone's wifi switch is in the "on" position?

Do you have an old/spare phone that you could try - to see if wifi will still work on that phone? Perhaps your current phone has developed a fault. Was wifi previously working on your current phone, then just stopped working at some point?
