OK, I hope you will understand me. The power of your water jet is given in pounds per square inch. Since the muzzle is much smaller than that, it is reasonable that the water jet is only creating 11 pounds of force.
Since I don't have the diameter of your waterjet, I can't prove if your waterjet has 60, 000 psi. What I can do is, that I can calculate the theoretical diameter of your nozzle, assuming your waterjet has 60,000 psi. For that I only need the area. Since the force on the plate is 11 pounds, I can assume that the area is 11/60000 square inch which I will call A. Since A = pi * r^2 I can just divide A by pi and take the root of that to get the radius. If I multiply that by two I get the diameter, which should be roughly 0.015 Inches. So if you measure the diameter of the nozzle and it is smaller, your waterjet has more pressure than 60000 psi and if it is bigger it has less.
I may be wrong since I'm German and imperial units are giving me a headache.

Great to see Dan and Mitchell again. I've missed you guys. Part of the reason I liked your channel, was that you both have an odd sense of humour, and your chemistry together was perfect. Nothing was too serious - the video where I think you cut up an anvil, and then return to the store, to get a refund, because it was faulty, made me cry with laughter. Similarly, accidentally firing a skateboard wheel into Craig's roof, was hilarious.
The first video I ever saw of yours did not feature the water jet. It did, however, feature Mitchell seeing what pepper spray, or maybe CS gas was like.
It was a real 'are you guys mental?' moment, and I knew I had to see whatever other batshit crazy stuff you had done - and I was not disappointed. I do hope you return one day.

Couple of suggestions for you guys to really get the most out of your setup:
Use grade 8 bolts for your axles. They're a lower tolerance alloy with another type of metal in them I think that makes them really strong and also a bit more rigid to prevent bending. Typically like a light gold color. Usually used for like car suspension and body mounting where high tension or shear is involved.
In your mounts, print the holes oversized and add into them some steel channel sleeves and then inside of that nylon sleeves. That'll reinforce the hole and make it really slippery to reduce friction. For an added safety measure, you could also have a couple of strips of 1/16" steel bent to form around the plastic so it works more like a bushing.
The mounts look orange, which means based on the 3D printed tire video they're PETG which is good for strength. But if you have some TPU left over, I might throw in a couple of layers around the bearing and mounting holes so it absorbs the shock when things get off balance. It'll help keep the energy going towards spinning rather than bending.
That big fidget spinner with the inner circle is called a planetary gear. It's the same type of gear that's in you automatic transmission, likely why it was able to go a little longer despite the type of material. And 27k rpm is pretty good, maybe 3 times faster than your transmission, but it has me wondering. What if you got a junkyard tranny, maybe out of a 40L60E that comes in Corvettes from before 2010, took out the 3rd gear (since you're keeping the center stationary the gearing is reversed) and spun it up? Properly balance gear in a waterjet might be pretty cool to see! Don't get me wrong though, it would be terrifying and I wouldn't want ro be anywhere near it when you turned the jet on. But if you're feeling brave, I think that would be one of the coolest videos and probably be one of the fastest things you ever test! That is, aside from an actual jet turbine lol.

The powder was creating a lot of damping effect, which is why you went shorter distance. By all other physics it should have went further (lower top speed = less air drag, same pedal distance at lower speed means more energy input into system assuming you pedaled just as hard).
Braking of course was just down to you going faster with the lighter wheels, you'd need to brake at the same speed (so do your max speed test or pedal up to 20 mph then hit the brakes once you get to a line).
Max speed would only be slower due to damping of the powder (which is a great way to dampen by the way, roller coasters sometimes fill the rails with sand), as well as any wobbliness.
Handling would be interesting, the gyroscopic force would be very noticeable but at low speeds I think you might notice the tires being wobbly just about as much (its a little bicycle after all, and even on my motorcycle with feet up over the handlebars you barely have to move your hips and you can go from nearly laying down on one side to nearly laying down on the other < or last month, went all the way to the ground, LOL!). At high speeds it would be kind of fun to play with the gyroscopic effects because it would be insanely stable but in high jumps turning the front wheel would be kind of cool because then you could spin the bike around in the air which you probably can't normally feel (at least much) on a bicycle if you were doing BMX style tricks.

Video Summary:
Origins (1989 - Start of Waterjet Channel): Dan and Mitch, the original founders, started the Waterjet Channel about seven years ago. Could it be breaking the sound barrier? Yes, well, kind of. You actually had a stock clip that reminded me of a video by Scott Manley that I watched last night where he was explaining some high level stuff about jet engine performance, as one does, and he mentioned that the outside edge of the fan blades of jet engines break the sound barrier and not necessarily as it approaches maximum thrust. So, I think it is possible that the outer surface of the titanium wheel could be breaking the sound barrier. I also think you're probably right that it is spinning slower than the aluminum wheel, but I don't know if that is because of the differences in density between the two wheels or overall surface area. It would be cool to see more experiments like this.
As far as actually measuring the speed of this wheel, what if you just put a scratch in the outer surface instead of trying to spot permanent marker? It might affect balance a little bit, but maybe you will be able to spot a scratch as it goes around and the light reflects off of it. I also wonder what might change if you changed the profile of the wheel from cylindrical to more toroidal. Maybe step back to the aluminum though, since it doesn't hate being made into something beautiful nearly as much as titanium seems to.
Nobody said anything about how you were operating the lathe, which has be doubting if I have been using them correctly. This might be a call out, but which one of us is it directed at?

Congrats on the cool Million subscribers, It was hard viewing when you first took over Daniel, (apologies if i was one of the negative assholes in comments, not sure if i commented, but I did think it at the time) the comedy seemed really strained and awkward, wonder how you feel looking back at your early videos now lol,

A few years ago, I was living at a different apartment complex then I do now. The building had 3 floors, I was on the top floor. Anyway, each apartment has a balcony, but the bottom floor instead of a balcony, had a back porch type situation with a glass sliding door.
Anyway, when I was getting home from work. I was walking to my building (the parking lot was behind the building so I’d have to walk towards the back side of the building, aka the side with the balcony’s. One of my first floor neighbors was power washing the concrete floor of his porch-balcony. As I was walking up, the man gave the hose thing, which was still running, to his son who couldn’t have been older than 11 years old, so he could grab something from inside I assume. I heard him say something along the lines of “just hold this, don’t move at all or point this at anything.”
When I say I fucking RAN to the side of the building faster than I’ve ever ran before. I’ve never used a power washer, but I knew how dangerous they were. Once I was safely behind the corner of our brick apartment building, I screamed to the kid “STAND COMPLETELY STILL! DO NOT MOVE AT ALL. HOLD THAT COMPLETELY STILL!”
Thank god the kid listened & didn’t move, & his dad came outside within a minute or so & everything ended up being fine. Once the father was back & holding it again, I went up to him & started screaming at the fucking guy. I remember I said something like “even if you don’t care about the safety of strangers, do you not realize that your actual son could lose a limb, or even lose his life?” The father treated me like I was just some overdramatic Karen lol.
The worst part? I asked the kid if he knew how strong it was. He said maybe a little stronger than a regular hose, & that his friends have sprayed each other with hoses in the summer to cool down, so it couldn’t be too bad. So this kid had no idea how dangerous this was, & his father just him holding that. I don’t blame the kid at all, it’s 100% the fathers fault. This was also the first & only time I made a complaint against someone, I wrote a letter to the building manager/landlord person about it. I don’t know what they said to him, but for the rest of the time I lived there, the father gave me dirty looks everytime he saw me lol, but I also never saw him using a power washer again.
I know this story probably sounds a bit fake, & I wish it was lol. But this actually happened. This was in April or May 2019.
