To be fair, James Watt compared his steam engine to draft horses (as stated in the video), which were pulling hours at a time, quite different from peak power. One of the main benefits of the steam engine was that you could keep up that power for as long as you had fuel, while a horse can only do a few pulls with that amount of power and then fatigue. It's like riding a bike. A sprinter on the track can pull of way higher power than a tour the france rider does, because there's quite a big difference between riding 500 meters or 200 km. While full power constantly for hours isn't particularly good for the engine, you can stay very close to it basically forever, unlike animals. A professional track sprinter tends peak around 2400 W, while a tour the france rider usually goes around 300 W on average in a stage. So the differences are huge. James Watts 'horsepower' was compared the the latter way of using a horse, while you guys measured the former. Still an interesting find though!
