A Hitomezashi stitch is definitely 2-colorable, because by construction, there are never more than 2 line segments meeting at a point (because you always alternate segments with gaps). In order for 3 polygonal regions to meet at a single point, there must be three distinct sides that share that point, which can't happen in a Hitomezashi stitch. More precisely, a graph is bipartite (2-colorable) if and only if it contains no odd cycles. But the dual graph of a Hitomezashi stitch is a tree, so it contains no odd cycles.
