Actually, you can. When the ISS is on the night side of Earth and you're looking away from Earth, the stars are visible.

The CGI is just a way to answer the question without having to book a flight and taking photos at various altitudes. Actually getting to altitude is left as an exercise for the reader.

The videos you've seen show e.g. astronauts walking on the Moon - in daylight. Or astronauts doing a spacewalk from the ISS - again in daylight. When you're outside in daylight, do you see stars? No. When you take photos in bright daylight, do you see stars? No. The exposure time is too short.
