  3. I believe it's typically grade 12, as it is also in Australia. Some advanced courses may introduce it in grade 11.

  5. You say no need for this step. I read a lot of comments saying that this step or that step is unnecessary or that the there is to much detail etc. This is a teaching channel. More steps is almost always better.

Examples like these are teaching methods. They're baby steps to get people started. Calculus is used a lot in physics. A common beginner "real world" problem is to calculate the height that a ball would reach after being thrown. For this, a polynomial is usually supplied that models the path.
