  1. I'm sure it's been mentioned, but on the off chance it hasn't... Most places measure the weight of the burger patty BEFORE cooking. Where the weight lost is in moisture evaporation and fat rendering (turning to grease and draining) during the cooking process. Admittedly, it sucks for us, but... not much we can do about it. 😞
