The bottle of water was super-chilled. The bottle of water had been in the freezer, but there were no nucleation points for a crystal to form, so it didn't freeze. However, once poured, it was kick started and instantly started freezing. This can happen with soda as well! A similar, but FAR more dangerous situation can occur when heating water in a coffee mug in the microwave. It becomes super-heated but can't start boiling for the same reason. It becomes dangerous because once you pour something in, it can instantly boil and erupt ou of the mug, severely scalding you! So if you insist on boiling water in the microwave (since it's conveniently super fast), put a few grains of salt or sugar in it first. (I'm sure many others have said similar already 😅)
