a lot of food is processed in ways we would consider unhygienic if we knew about them. for example pretty much all dried fruits and nuts produced in less industrialized countries are dried on outdoor asphalt or concrete surfaces (roofs, roads etc.) that people walk on with dirty shoes or feet or even drive on. some such as cocoa and coffee are at least sterilized by roasting afterwards, but a lot of dried foods are not. with the salt I'd say the problem is minimal because primarily, the salt and sunlight are going to kill any pathogen, and also those salines and the surrounding areas are pretty secluded in nature, not close to a lot of people or traffic (because realistically, perhaps we should be more worried about heavy metals and other toxic substances from engine exhausts and tyre wear in those dried goods rather than any pathogens).
