sharpening genuinely does take years, though not a lifetime. any good craftsman will never stop learning, because having an attitude of always trying to improve is the only way to get good at doing anything, and if you're like that you have no interest in ever saying "this is good enough, now I don't need to try anymore". I'm a violin maker, my job involves quite a bit of sharpening too.

Guardian Gusti there is no perfection. if you think you have reached perfection, you probably are not the best at what you do, because others who are still trying to do better will do better than you. the point is perfectionism, and that means that you never judge anything to already be perfect. the "takes x years to master" is just a japanese trope, there is no magical duration of training for anything.
