  1. you really should have applied some of the waste-management/sustainability focus that you guys want us to think you care about here - by covering what this factory does with all the off-cuts. besides the usual bone and connective tissue that can't be used for much worthy of note, and the fat they cut off that I sure hope they save for tallow (the usefulness is obvious, would suck if they threw that away), the interesting part here is the huge amount of dry-aging right they're cutting off. if all else fails, you could probably use almost all waste products from this factory by rendering fat for tallow for human consumption, and making animal feed/pet food from the rest. or you could be extremely american and bury everything in the nearest landfill. or you could do idiot sustainability and send it all to a biogas facility. either way, worth mentioning, don't you think???
