the best way to know how to breach any defense, is to be supremely good at defense. Once mastery of defensive warfare is achieved, a person now knows all teh various weaknesses of a given defense, and now knows precisely how to defeat each layer of a given defense.

not actually so. if you do the math for manning the walls of a fortification, assuming 1 man every 3ft along the wall, the larger a fort/castle, the easer it is to have plenty of manpower, but even small forts could maintain a watch rotation and man the walls.

there are a couple of WW1 movies about the tunneling war

watch Lawrence of Arabia for one possible idea of how they probably slept. the Part where they are crossing the desert and sleeping with their camels. Take note of the one leader's "tent".

Last of the Mohicans shows a siege and sappers digging up to the wall. different era, but showed it. One of the Sharpe's Rifles movies shows a siege/breach as well, and how even if you breached the wall, you're still climbing a hill of rubble into fatal funnel where teh enemy knows your coming and concentrates forces to cut you down as you come through. Not to mention teh pile of bodies that would accumulate at the breach. The Real Swamp Fox once built a "siege tower" to put cannons at higher elevation to chase the british out of their fort, whose guns were now at lower elevation (shorter range).
