May I ask you, when was the last time you ate fish intestines? Or fish heads, bones, the fins or the scales? Definitely in the West, eating fish heads is extremely rare. So when you eat fish, you only eat the fillet. So if you eat fish, you happily ignore what is put back into the sea. And if you do not eat fish, what you think happens to the fish that die naturally? They get eaten by the bottom feeders species, who feed on other species.
Fish, if taken care of, is as sustainable as plant foods, because nothing is wasted, because what is discarded go back into the ecological cycle of the sea immediately. Not like plant food waste, which mostly doesn't get composted, but ends up landfill.
