@holger_p For some reason people like to brown tortillas directly on a gas stove. I don't get why they can't use a pan. And regarding an open flame, it's not that dangerous. I'd argue electric coils are more dangerous because they're less visible. IMO the bigger problem with gas stoves is the lack of proper venting in 99% of installations. Pure natural gas is theoretically 100% clean burning but in practice using gas stoves results in a significant decrease in indoor air quality.

@williamcahill2462 I've never heard of an American stove keeping the gas off when the flame isn't proven. Newer ones have a spark ignitor activated only when the knob is in a specific position. But there's no interlock, if it fails to light or the flame goes out for any reason the gas will stay on. Ovens are different and work as you describe. Most new gas ovens are electronically controlled with a hot surface ignitor, but I have one which lights an intermittent pilot when turned on and then works like a traditional mechanical control without electricity.

@libertyman3729 I think you mean you can't buy a stove that's designed to need a match to light. If the burner is dirty or something is a bit out of place (or if the power goes out) you still need a match or other external ignition source.

@pete_lind I remember the Merrimack Valley incident and it didn't happen like that. A mistake in pipeline upgrades led to the distribution gas pressure being 150 times greater than the proper value. That's not the fault of any stove. If your 120/240v electrical service was fed with 36,000 volts you'd have electrical fires from the wires themselves breaking down, not to mention from equipment. Your circuit breakers wouldn't help much either.

@WW-wf8tu You can easily light a gas stove but almost all modern ovens use digital electronic controls. Standing pilot has been banned on new ovens for over 15 years and I've only seen one since then with a manual temperature knob. That one has an intermittent pilot which can be lit by hand.

@holger_p Not quite. A gas stove can be used as a grill. They also work without electricity. Those are real advantages for cooking. Having said that, those are fairly niche advantages. If I were building a new house I would probably go all-electric. A portable camping stove would be good enough for the rare times an actual flame is desired.

On a technical note, electric stoves don't use a rheostat, that would be incredibly expensive. Instead they usually use a control that cycles on and off a couple of times a minute. I also don't know how a pot could go from induction compatible to non-compatible without massive physical damage. If the steel insert is that thin I don't think it would work at all. It's worth noting that some very advanced induction stoves can work with aluminum/copper pans.

Spheres have the lowest surface area to volume ratio, that's why bubbles are round. But size also matters, perhaps you are comparing large cubes to small spheres. In any case my main reason for avoiding a built-in ice maker is that they are very failure prone and can get gross easily. Actually my main reason is that I don't like cold drinks and never use ice cubes.
