@MonkeyJedi99 Yes, before using an average grounding adapter you need to check for actual grounding (the instructions say this but not everybody reads them). If your boxes aren't grounded you'd need to use GFCIs unless you can add grounding.
I've never seen an unpolarized wall plug, and if a polarized socket is installed backwards it's the installer's fault, nothing to do with the age. Questionable GFCIs, always test monthly (or at least when you first move in).
About overloading circuits, code currently calls for 3VA/sqft for regular circuits, I don't know when this requirement started but I believe it's quite old. That's why I mentioned power strips, I think more outlets are required now but not more ampacity.
I don't know the history of the small appliance branch circuit rules but I'd imagine kitchens have had dedicated circuits by convention if not by code, as appliances like toasters have been around forever. Surely there's some circuit you can find for your microwave which isn't shared with all your lights. In my old house we used to run our air conditioner from a heavy extension cord plugged into a different room.
Grounding to plumbing shouldn't case any shocks (especially since no current should flow on ground), that's still done today in some cases. Maybe you had some metal plumbing replaced with plastic and not bridged, or maybe an improper N-G bond has been added. Either way, that's the previous worker's fault, not from the building being old. Side note, it's a real safety issue so the landlord should fix it.
Once you find a store selling the fuses you need you can stock up and it becomes a nonissue. I think they also make screw-in breakers now if you prefer. Ideally you'll figure out what each fuse feeds and avoid future overcurrents.
Well yeah, you've certainly made the point that there are inconveniences which are caused by old standards and more importantly shoddy upgrades and repairs. Why did you bring this up in the first case? Weren't we talking about wire colors?
