If you physically assault someone, even if you had no lethal intent, and due to a health condition they die from your assault, you're still criminally liable for their death. For example, if you beat somebody up and they turn out to have hemophilia and die from internal bleeding, you'd be facing homicide charges, either manslaughter or 2nd degree murder. It would make no difference that the average person would've only had some bruising. In no case is poor health of the victim considered a valid defense.

It would require proof that Wilson set out in advance to kill Brown and that he did so because of Brown's race. That's a much higher bar than would be needed in a state-level murder trial.
