I would say safety and health are the top reasons for electric / induction over gas, not efficiency or environment. If efficiency was your reason for not using gas stove, then don't eat any baked goods, as baking is the most wasteful form of cooking, as majority of heat is rediated to the environment, not focused into the food. So if you care about efficiency so much, just boil porridge with your induction stove every day instead of eating bread. Not to mention charcoal BBQ, wood fire pizza etc, So many nice food wastes heat energy, and does not concentrate 100% of heat energy into the food.

It's not just about boiling water.. If you want to cook fried rice with a wok, you need real fire.

@TwoBitDaVinci does it ignite flame inside the wok when you toss ingredients and hot oil together? The flavor from the real burning flame is difficult to replicate. Maybe this is too advanced for 99% home cooking though
