In Germany we distinguish Toast from Bread. Unlike this video, toast is way to soft to be eaten without toasting, impossible to spread hard butter from the fridge on it. Finally it's not filling, you don't notice you have eaten anything, main ingredient is air.
For long lasting bread, the traditional way is sourdough, 24h-72h dough processing, so the water is bound deep inside. And of course - no pure white wheat flour. You need either whole grain, or rye or things like that.
The most extrem form known in US, is pumpernickel, it lasts for months, without any treatment.
You are right, french baguette, you cannot buy in the morning to eat at dinner. It will be hard by then. The french go buy bread 3 times a day.
