Hey, Adam, I've been following Kenji's advice on brining the beans with a bit of salt and 1/8 tsp of baking soda, doing a side-by-side comparison, with just a water soak, and find his method not only reduces gas, but improves the texture, flavour, and reduces cooking time by about half. YMMV, but here in Bloomington, at about 745 feet elevation, it seems to work well. We love your videos!

Props for the shout out to Chef John (you even included the obligatory cayenne)! You can even make "american" cheese with the same basic, just use evaporated milk (and maybe some wine), citrate, cheese blends of your choice, and gelatin. Melt together, then pour out on a parchment lined sheet tray, cool in the fridge for an hour, cut into squares THROUGH the parchment to keep the slices from sticking, bag and refrigerate. Lasts a week in the fridge, and freezes well. Well done, Adam. Kenji is starting to look over his shoulder :-)

Greg, I thought this was a very noteworthy video. At my core, I think religion is a bit of a psychosis but most of religion is just cultural transmission. My wife is from Turkmenistan on the border of Uzbekistan, so we know these traditions well, as many of her relatives come from there. On the whole, I have an irrational bias to be accepting of other people's religious beliefs, even though I think they may be counterproductive on a global basis. The New Testament is 90% about social justice, but how many so called christians embrace that? As for food, shouldn't all food be organic and meat be treated with respect where the animal has zero suffering throughout it's entire life. I feel that you have invited this offering of opinion, and I have tried to be honest with my thinking about it. Barno and Sherzod are people who could very well be part of my extended family and I want them to live their lives with the least friction as possible, However, in your "Japan: Where Gods Aren't Gods and Worshipers Aren't Religious (Shinto Explained)" you explained that religion is not a driving force, so it makes sense to not introduce factors that make religious expression more acceptable.

Sabine, is there a correlation between the B-meson anomalies and Bee population declines? 😀 But seriously, this is a very important topic to consider that industrial farming is doing many harms to the planet: soil degradation, loss of habitat, super weeds adapting to herbicides, species loss (from arthropods to mammals), water use, climate instability, poor diet, commodity pricing, loss of nutrition, etc. (PS: nice dress)

Adam, have you noticed garlic getting less pungent and "garlic-like"? My wife and I have noticed and have started asking other people if they have noticed, too, and the answer seems to be, "well, now that I think about it, yes." We've shopped at the Farmers' Market, Bloomingfoods, Sahara Mart, and the new Rose Hill Farm Market, and it is all the same. Other aliums haven't been diminished.

Physics is replete with examples of doing big ideas with smaller budgets. You float the idea and then brainstorm how to make it a reality. That is how Kip Thorne and Joseph Weber got to finally build the LIGO observatories. Dream big, focus on the parameters, build a small prototype, narrow the error bats, demonstrate feasibility, ask for more funding. Similarly, do a good job, ask for a raise, move to somewhere that values your ideas more. Sabine, you always raise interesting questions and are willing to challenge the orthodoxy, YEAH!
