  1. A lot of historical cuisine was purely a flex. When spices were hard to obtain covering food in it to the point of absurdity would show your wealth. As access to spices became commonplace, it stopped being a flex. It wasn't about the poor. It's just that you gained nothing from doing that. Then the focus became quality ingredients. You could afford food so good that too much seasoning would be a waste. Didn't matter how much or how little seasoning the poor used - what mattered was that you could afford the good stuff.
