That's not how this works. The defense lines are where they are because they protect the strategic depth. Newer defense lines closer to the sea just give up distance to Ukraine meaning that cheap 155/152 mm shells will be within range. Now Ukraine has to use very expensive Storm Shadows or 100,000 dollar GMLRS to strike at strategic depth. Imagine what happens when those targets can just be demolished by hand-cranked guns firing cheap shells. It will be a slaughter, no need to breach the line when you can just hit fuel, ammo, the barracks where soldiers sleep, etc.

Because such vehicles are useful for logistics. The social media pages for Ukrainian units are often running fundraisers to acquire civilian vehicles or repair busted ones. There's some vehicles with Polish plates in Ukraine because many old beater cars were donated or purchased there and brought to the frontline. It's a logical idea to use a sacrificial mine clearer but at best it would get flipped over by the first mine, requiring another vehicle to push it aside and push through the same path to blow up just a few meters ahead.

Troops still get rotated. There's actual scientific studies about combat performance and it is known that you can get 6-8 weeks out of a man but then his performance drops like a cliff and he becomes a liability. Back then rations included condoms. They weren't meant for frontline use. Men would be rotated out of combat and since the abstinence policy failed miserably they were given the means to avoid STDs while getting some R&R.

Defenses built behind the existing ones will allow Ukrainian artillery to move closer and start smashing the strategic depth with cheap shells instead of having to use up expensive Storm Shadows. The push to Azov is like the push to the Dnipro in Kherson. Hit the bridge. Supplies will become scarce. Russia will leave. Ukraine doesn't have to fight for every inch of ground. They just need the ground necessary to pound the fuel, munitions, barracks, etc. and make the entire area impossible to defend.

@major685 The land bridge hinges on rail hubs and bridges that can be targeted. This war has shown how that will play out.
