  2. There is nowhere data regarding the break down points of different oils. That is the reason why people use the smoke point as a reference. I fry my stuff in rice bran oil.

  3. If I don't need that maillard reaction browning on my fried goods, then I use a teflon pan. But actually it's also a global question, so to speak. We really need to reduce all plastics in our usage. The excuse of Dr. Tan or Lee or is not acceptable to me. "I don't want half my kitchen underwater and my pants wet when I clean that soot out of my pan" that is not so, not even with iron pans, it's just lazy.
