That will be the ideal thing if unions at some point weren't controlled and managed by people who are evil and hypocrites, get in potential cahoots with the government and then take your country to a halt.
If a union is managed by someone good, with good people in it, things will be fine. They will just demand better working conditions and that is it. But that is not how it ends up being in the end.
Also, assuming that happens in an ideal world, a lot of restaurants will have to either fire people or just close for not being able to sustain. And/or all the prices in consequence will go up. And in the case many independent restaurants close, you'd only have big chains up who in turn will also be corrupt and dictating the prices and the market. And that is an on going never ending circle. Higher taxes, so you need to up the price but also the salary, so you need to up the price again. Since you're earning so much again, more taxes.
I'm not saying the workers don't deserve an established salary or good working conditions, on the contrary. But that's where I'm getting at, to have that you need stability at your job, and that is given by the stability of the business. Otherwise, you'd already be working somewhere else.
