It's what makes pizza dough taste great. The wheat used in the best pizzas is high gluten wheat. Great way to get more protein too.

Excepte those claims are entirely disproved in real lab studies, not just commercially paid for 'clinical teats'. The 'gluten effect' has been shown to be psychosomatic, except in people who have tested for Celiac.

@kaakrepwhatever I said it was true for those who have Celiac disease. For those who imagine they have it, think 'Gluten Free' sounds cool or it's a way to lose weight or increase energy? It's all in their minds, as the study showed. The subjects responded to what they were told was in their diets, not what was really in them.

@mrevilducky So many people think gluten is a 'carb' because it's in bread, so they think eliminating it is good for weight loss, or it's just 'bad'.

@ravenswood118 Actually the problem is that processed wheat is too easy to digest. Whole wheats are better because they digest slower and have less sugar shock to to pancreas. The GMO aspect has nothing to do with digestibility. It's what allows mankind to produce enough wheat to feed the population.

It's mostly psychosomatic. It's become a fad and now a multibillion dollar business. There is no scientific basis for the claims made by people who don't have celiac, as shown in double blind clinical tests performed by doctors who were not hired by the company selling 'gluten free' merchadise.

@nighthunder2 Consumer Reports ran an article about the research on gluten. The blind test dramatically showed that all of the so call benefits of the diet were psychosomatic. If you told people they were eating gluten they said they felt bloat, even if there was no gluten. etc

It was a quack theory that became a fad that became a multibillion dollar business. Now Cheerios instead of just relying on the ancient study that claimed eating oats lowers cholesterol can say 'Gluten Free'!

In clinical tests, people who were told they were on a gluten free diet (but weren't) claimed to have more energy and less 'bloating'. Those who were on a gluten free diet (but were told they were) claimed they had less energy and more bloating. This was in Consumer Reports back in 2016. It's in your head. It's normal for most people to feel 'bloated' (more full and needing to have a bowel movement) after a meal, especially a large one. The slices of bread have nothing special to do with it. Gluten is protein and makes pizza and bread taste good. It's great for someone on a low carb diet too!

I don't care what people eat. I only care what I eat. If I have symptoms of a cold and I chew gum and the then the cold goes away. I guess the gum did it. It's a famous logical fallacy. Post hoc ergo whatever. Anyway, it is well documented that the whole gluten business is a fraud on most people. If you want to go through the trouble of following it for the placebo effect.... well the mind is very powerful. Glad it worked for you.

GF often substitutes a carb like rice for the wheat. Gluten is pure protein so it's actually the best part of the bread.

@juho5282 Most rice comes from China and has traces of arsenic in it which have a cumulative effect.

If your doctor says you have Celiac then too bad. If you don't eat it. Gluten is protein and tastes good.

Many of the GF foods substitute rice, which now mainly comes from China. Rice requires lots of water and tests have shown that the water being used contains unhealthy amounts of heavy metals, principally arsenic. Chinese rice has been tested and shown to have small traces of arsenic. The arsenic stays in the body so has a cumulative effect. So that's a negative for many GF products, especially if given to babies or young children.

And the best tasting pizzas use wheat that has the highest gluten content. Gives it the 'chewy' taste. Gluten is pure protein, so good for body building, unless your doctor has tested you and found that you have Celiac disease.
