About brakes: first thing you need to figure out is where they rub. With hydraulic disc brakes if it rubs only one specific part of the wheel rotation, it's usually bent disc. Unlike car or motorcycle discs, bikes have really flimsy discs that get curved if you look at them badly. They can get bent by the heat alone (see also: "warped brakes" in case of a car). The fix is similar to trying the wheel: get something that barely rubs the disc, rotate the wheel and force the disc into true using any tool you think is okay for the job. In my experience, a high quality wrench is good: you just adjust the wrench narrow enough to just fit the disc and then twist the wrench towards the direction that rubs less. Be careful though, those discs are pretty flimsy. And just like wheel truing, keep doing that until you're happy with the results; you can never ever get it perfectly true, only nearly so. Be sure to degrease the disc after you're done with it.
