  2. many good cooks of yore noticed that scouring pots and pans lent off flavors and colors to foods cooked in them and spent vast amounts of care to encourage protective patinas. not so your actor, who appears to cook in scoured aluminum ware, a metal so expensive and rare in the 1800s that the pyramidion of the Washington Monument was cast of it, and so reactive to food acids that cooks to this day are warned to avoid it.

  4. everybody worked endless hours except the rich. and what would you rather do---work in your own kitchen cooking your own food your own way, or do whatever it took to induce whomever owned the means of production to supply that housekeeper with the hundreds of commodities needed to actually put a meal on the table---the groceries, the floor, the fire, the very table itself?
