The Germans didn't have the numbers to leave a section of that unoccupied, so they had to secure Stalingrad. And as we saw, the small bridgehead they did leave unoccupied, spelled doom doing Uranus Also, the point wasn't just to interdict Soviet oil, but to secure their own supply
