I can remember my gramp from britain telling me, when he was a kid, almost everyone had live stock in what little bit of garden they had, or at their allotments if they had one, usually a pig, if didnt know how to or could'nt slaughter it yourself, for a fee or portion of the end result you could hire a man, who came to your house with a apron, lump hammer hack saw, filleting knife, sharpening block, and a meat grinder and sort it all out for you on the spot, by disecting it into all cuts you desired and even making you sausages, that was back when braun was made to, and a man even brought the bones for the glue shop after,so the saying would go, the only thing you cant eat is its tail and his sqeak.....
