I've made homemade organic ice cream, sherbet, and sorbet for years. I love being able to control what's in my desserts. For several years I was on a non-electric kick, so I bought a Donvier ice-cream maker. It's super easy to use and doesn't require rock salt and ice. You do need the ability to freeze the inner container, though. I always kept mine in the freezer when it wasn't being used so that it was always ready for me. I kept it in a huge ziptop plastic bag so that frost didn't form on it. Depending on the ingredients and how hot it was in the room, it would take anywhere from 30 minutes to an hour to make a batch, giving it a crank every couple minutes. I almost always used half-and-half because organic heavy cream is harder to find.
