The orange juice and butter are a nice touch. 👍 I've never heard of using ginger ale as a fluid when cooking fresh yams. That's interesting. I wonder what that does for them. 🤔

Yep, canned yams are a great thing. Lol. I'm so happy I can find them in organic at Kroger stores. I love yams and sweet potatoes as long as they're not buried by marshmallows. 😋 I actually prefer sweet potato pie over pumpkin pie. My mom got me hooked on that. It's so yummy. Homemade is best, of course, but she would cheat and get Sara Lee. It is easiest, of course. Lol.

Karo used to be a great product until the era of GMO corn. I wouldn't touch that with a ten-foot pole right now. Lol. Thankfully, I can get organic non-GMO corn syrup. It's from Wholesome Sweeteners. It's blond in color rather than clear because it's more natural. 👍

Okay, full stop on the vanilla. Lol. Vanilla is not clear. Anything calling itself vanilla that's clear in color is fooling themselves. How on earth did they get a clear fluid from a vanilla bean? I made my own vanilla extract with organic beans and alcohol and it is a deep dark brown. I would love to send you some of my vanilla extract. Do you have a mailing address?

If using fresh sweet potatoes, you can par-cook them to get them to the level of their canned counterparts.

You're a blessing to us, as well, Carol. Thank you. 🕊😘

I personally tweak recipes to contain the least amount of added sugar as possible while still tasting sweet enough. I can usually get away with cutting it in half at the very least. Once I started going organic and making all of my own deserts, my tastes changed. I have a hard time eating a normal doughnut or piece of cake, for example. My teeth literally cringe when I take a bite. I've come to notice that we, as a society, use way more sugar than needed--to our detriment. An excess amount can contribute to several illnesses. How's that for a public service announcement? Lol. 😁 For this recipe, I would have definitely used only 1/4 cup corn syrup. Possibly an 1/8th of a cup. Sweet potatoes and yams are already really sweet, but you do need enough liquid to make a basting syrup. You can always use water or apple juice or cider; the latter two adding sweetness and thickness, of course. I usually just make it very simple on the bottom and add a streusal topping for sweetness and crunch. But that's a baked dish, of course.
