Thanks for a really interesting video! I have a plain old electric stove with resistive coils. I've never used gas, and it's a little scary to me. Too much risk of fire! If it's continuously emitting methane and benzene, well no thanks. Not sure if I want to upgrade to induction, since my current stove will last for years yet. But I like the idea of achieving a precise temperature in the pot! No more boilovers would be awesome. It might be interesting to get one of those cheap induction burners and try it out, just for fun.
