  1. Step one... Peal potatoes. Step two... Cut potatoes into thin chips. Step three... Leave potato in water for 30 minutes then pat it dry of extra water. Step four... Blanch potatoes in a dome pan with 1 inch of oil while consistently moving the potatoes. Then pat it dry of extra oil. Step five... Cook potato until satisfied. It's similar cooking a hash-brown but you base or stir the potato in the oil. Instead of dunking it into 2 inches of oil. Granted, I was cooking a small batch 6 potatoes cut into 1/4th of an inch in disc form.
