  1. Your professors were definitely at fault. They should've at least mentioned or dedicated a lecture or refer you to the literature on all the different interpretations of QM. It happened to me too as an undergraduate where only the Copenhagen interpretation was taught.

  2. ***** " It's only our knowledge of the particle that changed, not the particle." That's only one interpretation and not even the most popular one. Your description assumes that the particle has a definite position and momentum at all times which is wrong.
