  1. Is it necessary to pasteurize the juice when making cider? I'd imagine it would destroy some of the vitamins present in the apple juice.

  2.  @kjdude8765  I meant hard cider. (Presumably unfermented juice can be preserved by freezing it but that's not possible during fermentation.)
