  1. "Cheese forward".... 🤣 Thank you Max, I really needed to laugh, it's been a tough day. This was a lovely episode, and when you made the pasta it reminded me of my Italian granny ❤ To tell the truth, they were both Italian, but only one made tagliatelle by hand. She also rolled them out by hand, and while I'm sure that sounds impossibly time-consuming in our age of pasta rollers, it meant that the pasta would pick up the grain of the old wooden table, which gave it a wonderful texture. Btw: in "trattoria" the stress falls on the "i" rather than the "o" - I'm only telling you because your pronunciation is otherwise impeccable, and I thought you would want to know. 🤗
