I remember being taken to Florence when I was little - not as exotic as it may sound, my mother is from Tuscany and her folks still live near the city - and we visited the Central Market, which pre-gentrification (sigh) was still a huge, noisy, wonderful place with one floor devoted to fruit and vegetables and the other to meats and cheeses. The sort of market where retailers would go first thing in the morning to stock up, but that also sold directly to the public. As I was being led around by the hand, I looked up and... saw a row of severed boars' heads laid out on a stall 😱 It took me a moment to even piece together what I was seeing - then came the screams! I'm sure that experience contributed to me going vegan some 25 years later. I was SO relieved you didn't find the boar's head, Max, is what I'm saying 😂

There's a wonderful ASMR Ukrainian cooking and crafts channel called Authentic Food Around, in their most recent video they made kutya and uzvar and in the next they'll present the twelve dishes of the xmas eve feast! As a vegan who's learning Ukrainian, I'm really excited about this... obviously I know not everyone is religious (I'm an atheist myself), but if I manage to time my future visits to the country with a fasting period, it should be easier to eat traditional food!

@1One2Three5Eight13 I'm going to make kutya (and uzvar) this xmas! I'll use spelt berries instead of wheat, because I think I'll enjoy using them in other dishes too. I might have to change some of the dried fruit in the uzvar because I don't have two different types of dried pear, but I have dried apples and prunes, amazing smoked pear that a friend recently brought back from Kyiv, and I'll probably throw in some dried figs and apricots. Can't wait 😁

@beth12svist Thanks, yes I know, Italy's still like that now but over the 23 years I've been vegan I have noticed changes every time I visit... that makes me hopeful for my future visits to eastern Europe ☺
