I believe it was a choice of fish or steak, I only remember because I had the lasagne.

They meant extra strain on the engine, they didn't simulate the wind, they simulated the effect it had on the engine by being able to run the engine at speeds higher than intended as though it was running uphill, or running in to a head wind. If a train is powering in to the wind or up a gradient it is just more strain on the engine at the end of the day and so what they can simulate here is that extra strain by running the engine at higher than optimal power settings.

According to another commentator the engine featured here, No. 60007, 'Sir Nigel Gresley', is still fully functionall as of 2024 as a working museum piece.
