Screenwriters have a love affair with totally implausible motorcycle chase scenes. Even John Wick engages in them. Couldn't agree more with your "We want this spectacle and the plot exists to create it." It used to be the visuals were a real struggle to create, in service to the story. Now the visuals they know they can create drive the plot.

FWIW, that lecture by Jeff Goldblum in the original JP was a condemnation of human progress, scorning the incremental advancements of the present built off incremental advancements of the past.

The 1st JP was highly contrived, as well, with characters that were too dumb and too smart, by turns. Great concept idea by the original author, but story telling in the movie was very poor. Kind of like George Lucas screenwriting, where the spectacle is imagined and then the characters and plot are contrived to provide it. The original SW trilogy was a basic 3-part Western, with visual effects no one had ever seen, before, in service to the plot. The tricky part for sci fi movies was providing those visuals without looking totally fake. Then the visuals became REAL and the writing went into the toilet.
