THEY ARE eaten and there's a mini doco on YouTube about it. they're eaten as soft shell crabs so they have big tubs where hundreds are kept individually and when they change their shell, those individual ones are sold that day and eaten or processed by the next day. They keep it going and go thru the tubs daily.
