Regarding habituation, with the example given, it has nothing to do with neuronal stimulation, it's totally about the visual mechanism of the rods and cones themselves. That is, it's happening in the eye, with the optical sensory cells in the eye itself, NOT the brain. So, it's an interesting example, but a highly flawed one!
Also, regarding choice at a restaurant, a "degustation" menu contains no choice, but huge variety anf novelry, and I find them hugely enjoyable.
I don't always need choice if I trust my host.
