Sustainability is a good thing, but you have to prioritize.  Once you've discarded the trivial -- and there certainly is an excess of the trivial (maybe we can figure out how to recycle it) -- then you have to make it EASY for people to do. Driving your food waste to a farmer's market for composting is RIDICULOUS and wasteful, possibly doing more harm than good. Neighborhoods should (and many do) have community gardens, which are great places to install simple composters (within walking distance of people's homes and a quick shovel toss from where the compost is most useful).
